Sweet & Sour Meatballs

Ingredients

1 c. canned pineapple juice

1/2 c. brown sugar

1/3 c. rice vinegar

3 Tbsp. ketchup

2 Tbsp. soy sauce

1 1/2 Tbsp. cornstarch

2 Tbsp. water

24 meatballs

1 bell pepper

1 onion

1/8 lb snow peas

Instructions

Step one: 

Combine pineapple juice, brown sugar, rice vinegar, ketchup, and soy sauce in a bowl.

Step two: 

Roud chop bell peppers and onion. Cut ends off of snow peas.

Step three: 

Sauté bell peppers and onions in a pan with a little oil for about 2 minutes. Add meatballs and stir. To that, add the sauce and mix until it’s combined. Cover and simmer for 20-30 minutes.

Step four: 

Add snow peas halfway through the simmering process. Stir in a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons water) to thicken the sauce.

Serve:

Serve the meatballs and sauce over a bed of freshly prepared rice.
