Chili w/ Cornbread & Wassail
This is a meal that is great for Halloween night before sending the kids Trick-Or-Treating. I have this amazing chili with a side of cornbread and a warming wassail to ensure the kiddos are warm all night long.
Ingredients
Chili:
1/2 lb ground beef
1 med onion, chopped
1/2 cup green bell pepper, chopped
2 Tbsp minced garlic
16 oz can chopped tomatoes
1 16 oz can kidney beans
8 oz can tomato sauce
3 Tbsp chilli powder
1/2 Tsp dried basil
1 Tsp salt
1/2 Tsp pepper
Cornbread:
1/2 c. butter
2/3 c. sugar
2 eggs
1 c. buttermilk
1/2 tsp. baking soda
1 c. flour
1 c. cornmeal
1/4 tsp. salt
Honey Butter (For Cornbread):
1/4 c. butter
2 Tbsp. honey
1 Tbsp. marshmallow fluff
Wassail:
2 quarts apple juice
1/2 tsp. whole cloves
1 whole nutmeg
1 cinnamon stick, broken in half
3 (3/4 cups) oranges, juiced

Intructions
Chili:
Step one:
Start by heating ground beef in an InstantPot. When the beef is broken up add the onion and green bell pepper. Cover the pot slightly with lid.
Step two:
Once cooked, drain the excess fat to ensure your chili isn’t greasy. Add minced garlic at the end of the sautéing process to prevent it from burning
Step three:
Add the remaining ingredients: tomatoes, kidney beans, tomato sauce, chili powder, dried basil, salt, and pepper. Stir everything together.
Step four:
Cover and let simmer for 30 minutess to let flavors come together and get warm.
Serve:
This is bet served warm with a dollop of sour cream and cheddar cheese sprinkles on top.
Cornbread:
Step one:
Preheat oven to 375°F and grease an 8×8 inch pan.
Step two:
Cream together softened butter and sugar in a mixer until the mixture reaches a fluffy, smooth consistency.
Step two:
Mix in eggs. Add buttermilk and baking soda until incorporated. Add flour, cornmeal, and salt. Be careful not to overmix the batter. Spread the batter into the greased pan.
Step three:
Bake for 30 to 40 minutes, or until a toothpick inserted into the center comes out clean.
Serve:
This is best served warm with the honey butter listed below and the chili.
Honey Butter:
In a small bowl, combine softened butter, honey, and marshmallow fluff. Use a whisk to whip the mixture until it becomes light and fluffy.
- Note: I recommend doubling this recipe as it tends to go quickly!
Wassail:
Step one:
In a pot, combine apple juice, cloves, nutmeg, and cinnamon stick (broken in half). I recommend using a tea steeper or simply hanging the spices off the side for easy removal, or you can just use a slotted spoon to remove as well. Add the juiced oranges.
Step two:
Bring the mixture to a boil, then reduce to a simmer. Let simmer for at least one hour total to ensure the flavors steep properly. After the first 30 minutes, taste the mixute. You may want to remove the cloves at this point, as they can become overpowering, while letting the cinnamon and nutmeg continue to steep for the remaining time to reach your preferred taste.
Serve:
Once the desired flavor is reached, remove the remaining spices and keep the Wassail warm on the stove for guests to enjoy throughout the evening.
