California Chicken Bowl

Ingredients

1 rotisserie chicken breast

1 zucchini

4-6 grape tomatoes

Salt and pepper (to taste)

Caesar dressing (to taste)

dollop of guacamole

6 c. cooked rice

Instructions

Step one:

Make rice as per package instructions.

Step two:

Half or quarterer the tomatoes, set aside. Cut chicken into 1/2 inch cubes, set aside, toss with desired amount of dressing.

Step three:

Heat a fry pan on med high heat and add oil. Quarter zucchini then slice into 1/2 inch slices. When hot add zucchini and sautee until golden brown season to taste with salt and pepper. 

Assemble:

Add rice then chicken, tomatoes, zucchini and guacamole. Enjoy!
