Lemon Bars
Ingredients:
Shorbread crust:
1 c. flour
1 c. butter, softened
1/4 c. powdered sugar
1/4 tsp vanilla
1/4 tsp salt
Lemon layer:
2 eggs
1 egg yolk
1/2 c. sugar
2 tbsp flour
1/4 fresh lemon juice
2 tbsp lemon zest
1 tbsp or more powdered sugar for dusting
Instructions:
Step one:
Preheat oven 350 degrees F. Grease 8×8 baking dish.
Step two:
Mash flour and butter with wooden spoon until mixed. Combine powdered sugar, vanilla and salt. Mash into a crumbly dough.
Step three:
With moistened fingers press dough into baking dish. Fork prick the crust. Bake until edges are just golden brown, about 22 mins.
Step four:
In a bowl whisk egg and egg yolk together. Add sugar and flour, mix well. Whisk in lemon juice and zest for 2 mins. Pour over prepared crust.
Step five:
Bake for about 25 mins until thin sugary crust forms. Cool completely.
Serve:
Dust with powdered sugar just before serving. Cut into 16 pieces and serve.
