3/4 cup sundried tomatoes, drained and roughly chopped
2/3 cup basil pesto
2/3 cup half and half
parmesan cheese, to garnish
Fresh Basil Pesto:
1 1/2 cup fresh basil
1/2 cup parmesan cheese, grated
1/2 cup olive oil
1/3 cup pine nuts
1 tb garlic, chopped
1/4 tsp salt
1/8 tsp fresh ground pepper
Instructions:
Pesto:
Add all ingredients into food processor and pulse until smooth. For better results add olive oil last and add slowly as a drizzle, so as not to separate. Salt and pepper to taste.
Pasta:
Step one:
Cook pasta using package directions. drain.
Step two:
Heat oil in pan over med-high, add tomatoes and sauté for about a minute. Change to low heat add chicken, pesto and cream, stir until combined.
Step three:
Add pasta and stir gently until combined. Salt and pepper to taste.
