Spaghetti Carbonara

Ingredients:

3 egg
2 tablespoon half & half (subsitute with milk or cream)
4 slices bacon, cut into 1 inch pieces 
8 oz Spaghetti
1/3 cup parmesan, grated
1/2 cup fresh peas
salt and pepper to taste
 
garnish:
extra parmesan, grated
fresh pepper
chopped parsley 

Instructions:

Step one:

Let eggs and half & half come to room temperature for about 1 hour.

Step two:

Bring a large pot of water to a boil.  While you wait, crisp up bacon pieces in a fry pan. Remove and place on paper towel to drain.

Step two:

Salt boiling water and add peas for about 1 minute. Remove with a slotted spoon and reserve in a bowl. Add Spaghetti to water and boil while stirring occasionally. Cook for 9-10 minutes or until al dente. Reserve 1/2 cup pasta water before draining. Drain completely and return to the pot.

Step three:

Whisk the eggs in a bowl. Add parmesan and whisk together. Add a little bit of the pasta water and keep whisking. Pour over pasta and toss thoroughly, and more of the pasta water if it becomes too thick.  Add bacon and peas.

Serve:

Garnish with parmesan cheese, pepper and parsley.
