Chicken Cobb Salad
Ingredients:
2 eggs
4 strips of bacon
1 chicken breast
4 tomatoes
2 romane hearts
crutons (as desired)
Queso Fresco (to taste)
Instructions:
Step one:
Cover eggs with cold water in a pot and bring to a boil. Take off heat and cover, leave for 18 mins and then rinse in cold water until cooled.
Step two:
Lay 4 strips of bacon in frying pan and then turn on heat to med low. Cook until browned and crispy on both sides. Remove and drain on a paper towel.
Step three:
Chop romaine lettuce and rinse and dry. Chop bacon, egg, Chicken breast and tomatoes. Assemble salad, put romaine on the bottom of the bowl, add chicken, egg, tomato and bacon to the top. Add crumbled queso fresco and top with croutons. Add dressing, I suggest red wine vinaigrette or ranch.
