Hiyashi Chucka Noodles

Ingredients:

2 pkg ramen

2 eggs

2 slices ham (cooked)

1/2 c grated carrot

1/2 cucumber

1/5 sheet nori

5 tbps chicken stock

3 tbsp soy sauce

3 tbps rice vinegar

2 tbsp white sugar

1 teaspoon sesame oil

1/2 tsp garlic chili sauce

Chinese mustard (if desired)

Instructions:

Step one:

Cook ramen according to package but without the seasonings. Place in fridge to cool while you prep the rest!

Step two:

Crack eggs and whisk in a bowl. Then cook the eggs but don’t mix it around in the pan, let it cook as a sheet.

Step three:

Thinly cut ham, cucumber, knori and cooked eggs. Set aside.

Step four:

Mix chicken stock, soy sauce, white vinegar, sugar, sesame oil and chili sauce in a small bowl.

Step five:

Build the bowl by placing the cooked ramen on the bottom of a bowl, then add the eggs, ham, carrot, cucumber and knori. 

Serve:

Add the sauce to your liking. I like to add Chinese mustard to this so feel free to add that or leave it out.
