Asian Style Country Ribs

Savory but slightly sweet Asian style country ribs are so good. You can be a novice to make this satisfying dish. This can be your go to on a busy day when you don't have time or don't want to stay in the kitchen. Make it a complete meal by adding rice and broiled snap peas. These ingredients should be in your pantry, if not once you make this you'll have them and can use them for future meals. If you don't make a lot of Asian meals invest in small bottles. This goes perfectly with the rice and snap peas. The meat, sauce and peas flavor the rice. So place the rice on the bottom, top with the ribs, and the peas when dishing it up. You can use a plate or bowl. Then drizzle with boiled sauce and, to garnish, sprinkle with sesame seeds. I could curl up on the couch and eat this anytime. Yum!

Asian Style County Ribs:

¼ cup lightly packed brown sugar

1 cup soy sauce

2 tbs sesame oil

2 tbs olive oil

2 tbs rice vinegar

2 tbs lime juice

2 tbs garlic, minced

2 tbs ginger, minced

1/4 tps red pepper flakes

6 boneless country-style pork ribs

Whisk together brown sugar, soy sauce, sesame oil, olive oil, rice vinegar, lime juice, garlic, ginger and red pepper flakes.

Place in non metallic bowl or plastic ziploc bag. Add ribs and refrigerate overnight or at least 8 hours. Reserve 3/4 cup marinade.

Cook in remaining marinade for 2 plus hours in 350 degree oven until tender or in a crockpot on low for 6-8 hours until tender and falling away.

Snap Peas:

Toss sugar snap peas in olive oil and sea salt. Broil in oven for 5 mins, toss halfway through if desired. Serve immediately.

Rice:

Short grain rice.

2 cups rice to 2 1/2 cups water. Either cook in rice cooker or bring water to a boil, add rice, return to a boil, then cover and simmer on low for about 20 mins. Do not open lid. Turn off heat and leave for a few mins. Fluff with a fork before serving.
