Corn Chowder

Ingredients

 

  • 3/4 cup butter
  • 1 cup potatoes (diced)
  • 1 cup celery (diced)
  • 1 cup onion (diced)
  • 1 cup green bell pepper (diced)
  • 1 cup flour
  • 3 cups corn
  • 3/4 Tbsp black pepper
  • 1 & 1/2 Tbsp salt
  • 3/4 Tbsp thyme
  • 1 tsp Tabasco
  • 3/4 cup cooking sherry
  • 2 cups water
  • 2 quarts half & half

Step One: 

Melt butter in InstaPot or a large pot. Saute celery, onion and green pepper until tender and translucent. 

Step Two:

Add flour and stir to combine with butter completely.

Step Three:

Add black pepper, salt, thyme, sherry, water and potatoes. Simmer for about 10 min. Add corn and half & half.

Step Four:

Simmer for about 10-15 minutes or until potatoes are tender. Stir occasionally.

Serve:

Taste soup and add salt and pepper if needed. Serve with bread or any of your favorite sides. Enjoy!
