Lasagna Roll Up

Ingredients:

One package of lasagna noodles

28 oz Marinara sauce

Large crown of broccoli (6–8 cups) 

2 medium carrots

15 oz ricotta

1 cup shredded mozzarella

1/4 cup parmesan 

Salt and pepper

Instructions:

Boil Noodles:

Cook lasagna noodles in salted water for 10 minutes, then drain and keep them in cold water to stay moist.

Prep Vegetables: 

Finely mince the carrots and broccoli using a food processor or by hand.

Make Filling: 

In a bowl mix the ricotta, Parmesan, salt, pepper, and minced vegetables together.

Assemble Roll-ups: 

Preheat the oven to 350°F. Spread the filling onto individual noodles, roll them up, and place them in a baking dish over a layer of marinara sauce.

Bake: 

Bake for 35 minutes until bubbly, then top with the remaining mozzarella and return to the oven until the cheese is melted.

Make-Ahead: 

You can assemble the roll-ups, cover them with foil, and store them in the fridge to bake later, making this an ideal dinner for busy schedules.
