In a bowl beat eggs then add to mixer, mix in buttermilk, oil, and mashed, extra-ripe bananas.
Step three
In a separate bowl, whisk together white sugar, flour, baking soda, and salt. Combine the wet and dry ingredients, being careful not to overmix.
Step four:
Pour the batter into a prepared bread pan—either greased and floured or lined with parchment paper. Bake for approximately 1 hour 20 minutes, or until a toothpick inserted comes out clean. Let the bread cool for 5 minutes before transferring it to a rack.
Serve:
This is best served warm and I like to spread on butter.
