Cheesy Chicken Broccoli Casserole

4 c. cooked chicken, cubed

1 can cream of chicken

1 c. sour cream

1 c. cheddar cheese

1 broccoli crown

5 c. cooked rice

1/2 tsp. salt

1/4 tsp. pepper

Step one: 

Preheat the oven to 400°F. In a large bowl combine sour cream, cream of chicken, cheddar cheese, salt, and pepper.

Step two:

Cut broccoli and chicken into bite-sized pieces and add to the cream mix. Mix until everything is incorporated. 

Step three: 

Layer the cooked rice at the bottom of the dish, then add the chicken mix. 

Baking: 

Cover the dish with foil and bake for 40 minutes or until the edges are bubbling.

Tips:

I like to use rotisserie chicken for an easy prep and it adds a lot of flavor.

If reheating this from the fridge, add maybe another 10 minutes to make sure it’s cooked through.
