Chipotle Sauce (I like the Taco Bell Chipotle Sauce)
Instructions:
Step one:
Set griddle or pan to medium heat. Start with a layer of cheddar cheese on the bottom; you can also substitute this with Monterey Jack or pepper jack.
Step two:
Add chopped rotisserie chicken followed by salsa. Drizzle with Taco Bell Chipotle sauce. Add a bit more cheese on top to help the tortilla stick, then place the top tortilla on top.
Step three:
Cook in a lightly oiled pan or griddle over medium heat until crispy and melted. Use a lid to help the heat penetrate and melt the cheese thoroughly. Once melted, cut the quesadilla into quarters.
Serve:
Serve with sides like sour cream, guacamole, or lettuce.
