Breakfast Burrito

Try this satisfying recipe for a delicious breakfast on the go. This is great to make on the weekend and have for the busy morning during the week. Also, it’s a fantastic lunch for your work when you didn’t prep anything, just grab and go.

Ingredients:

4 flour tortillas

6 eggs

3 Tbsp milk

2 Tbsp butter

8 oz hashbrowns

1/3 cup cheddar cheese

6 strips of bacon

Salt & pepper to taste

Salsa to taste

 

 

Instructions

 

Step one:

Cook bacon in large skillet over medium heat. About 4 min per side or until desired cripiness. Place bacon on paper towels to remove excess oil. Discard bacon grease but leave about 2 Tbsp.

 

Step Two:

Cook hashbrowns in same pan as the left over bacon grease. Season with salt & pepper. Wipe pan with paper towel.

 

Step Three:

Add 2 Tbsp butter to pan and let melt over medium low heat. Mix 3 Tbsp milk and 6 eggs in small bowl and mix to combine. Pour eggs into pan and cook until creamy.

 

Assemble:

On one tortilla, place one strip of bacon, 1/4 of cooked eggs, hashbrowns, cheese, and salsa (optional). Fold in sides and roll up into a burrito.

 

Enjoy!

Either eat it right away or wrap it up in foil to take on the go!
