Pork Chili

Ingredients:

1 small onion, chopped

1 medium green pepper, chopped

1/2 chipotle pepper, chopped

1 Tbsp canola oil

3 garlic cloves, chopped

1 can (16 ounces) red beans, rinsed and drained

2 c. beef broth

1/ c. salsa

2 1/2 tsp. ground cumin

2 1/2 tsp. chili powder

3 lb pork butt

sour cream (garnish)

cheddar cheese (garnish)

Instructions:

Step one:

In a CrockPot add beef broth, chopped onion, green bell pepper, garlic cloves, red kidney beans, chopped chipotle pepper, cumin, chili powder, and salsa. Stir ingredients together. Add pork butt. Cook on low for about 6-8 hours until the meat is tender and easily shreds with a fork.

Step two:

Once finished shred pork with forks. Stir the chili and adjust seasonings if needed.

Serve:

Serve the finished chili with shredded cheddar cheese and sour cream for a quick and comforting weeknight dinner.
