Pumpkin Chocolate Chip Bread
Ingredients
1 (15 ounce) can pumpkin puree
4 eggs
2/3 c. water
1 c. avocado oil (or any oil you have)
3 c. sugar
3 1/2 c. flour
2 tsp. baking soda
1 1/2 tsp. salt
1 tsp. ground cinnamon
1 tsp. ground nutmeg
1/2 tsp. ground cloves
1/4 tsp. ground ginger
1 c. chocolate chips
Instructions:
Step one
Preheat your oven to 350°F and grease/flour your bread pans thoroughly, ensuring you reach all corners so the loaves release easily.
Step two
Combine 3 1/2 cups flour, 2 tsp baking soda, 1 1/2 tsp salt, 1 tsp cinnamon, 1 tsp nutmeg, 1/2 tsp cloves, and 1/4 tsp ginger in a bowl.
Step three
In a mixer, blend 1 can (15 oz) pumpkin puree, 4 eggs, 1 cup oil, 2/3 cup water, and 3 cups sugar.
Step four
Gradually add the flour mixture to the wet ingredients, scraping the sides of the bowl to ensure no lumps remain. Fold in 1 cup of chocolate chips at the end.
Step five
Pour the batter into the prepared pans and bake for approximately 50 minutes, checking with a toothpick for doneness.
Serve
It is also excellent served warm or toasted with a little butter
