Combine the shortening, white sugar sugar, brown sugar, egg, and vanilla first. Mix until thoroughly combined. Then, incorporate the remaining dry ingredients, oatmeal, coconut, cornflakes, and chocolate chips. The dough may appear dry, but it will come together.
Shaping & Baking:
Use a scoop to form large cookies on the tray. Bake for about 10 minutes until the edges are golden brown.

Let the cookies cool on a rack. They are fragile while warm but firm up as they cool. Store them in an airtight container to maintain moisture, or freeze them in a flattened Ziploc bag for long-term storage.
