Wassail

Ingredients:

2 quarts apple juice

1/2 tsp. whole cloves

1 whole nutmeg

1 cinnamon stick, broken in half

3 (3/4 cups) oranges, juiced

Instructions:

Step one:

In a pot, combine apple juice, cloves, nutmeg, and cinnamon stick (broken in half). I recommend using a tea steeper or simply hanging the spices off the side for easy removal, or you can just use a slotted spoon to remove as well. Add the juiced oranges.

Step two:

Bring the mixture to a boil, then reduce to a simmer. Let simmer for at least one hour total to ensure the flavors steep properly. After the first 30 minutes, taste the mixute. You may want to remove the cloves at this point, as they can become overpowering, while letting the cinnamon and nutmeg continue to steep for the remaining time to reach your preferred taste.

Serve:

Once the desired flavor is reached, remove the remaining spices and keep the Wassail warm on the stove for guests to enjoy throughout the evening.
